My seasonal love affair with all things fall has begun. I wake up eagerly in the mornings hoping I can wear a sweater, all our wool blankets are out (just in case) and my kitchen counters are loaded with root vegetables, squash of all varieties, and apples.
Fall is my season. And as the hours of daylight start to lessen, I find myself needing an afternoon snack more than ever.
If you are like me and need a 3 p.m. snack, I’d like to introduce you to my pumpkin smoothie recipe.
This just sweet enough pumpkin smoothie is the perfect treat to see you through the afternoon energy dip when you want something sweet but will keep you satiated until dinner.
The addition of the Nordica Smooth Cottage Cheese makes all the difference, one container has 10g of protein and is only 110 calories. Plus, pumpkin is a great source of vitamin A, vitamin C, potassium and fibre. You can feel good about drinking this smoothie.
I’ve talked before about how much we love this smooth cottage cheese in my house and the Salted Caramel is our top flavour choice (there’s also Vanilla Bean & Lemon) for the fall season. Fall lovers, try it on its own and you’ll see what I mean. Yum.
The Salted Caramel flavour takes this smoothie from average to delicious.
Sweet Pumpkin Smoothie Recipe
makes two small servings
- 1 cup unsweetened almond milk
- 1 container of Nordica Smooth Salted Caramel Cottage Cheese
- 1/2 cup pumpkin puree
- 1 banana (preferably frozen)
- 1-2 dates
- a pinch of pumpkin pie spice or (cinnamon, nutmeg, cloves)
Toss it all in your blender, try to start with the liquid first. Blend until smooth. Pour into your favourite glass. Sprinkle with cinnamon. Enjoy!

Oh! I have not come across this type of cottage cheese before! I’ll have to see if its available out west.
It’s really good, Laurie. I don’t enjoy eating the traditional cottage cheese on its own but the smooth cottage cheese is super yummy. My kids take it for lunch sometimes.
